It has its roots in the distant Middle Ages in Eastern Brabant. The Friars, given the proximity of the Dutch ports, exploited the availability of the spices marketed by the India Company. Coriander, antioxidant and antibacterial and Curacao (bitter orange) combined took the name of "Gruit", almost completely replacing the traditional hops. Our variant with the delicate mandarin zest and the inevitable raw wheat (unmalted). Also known as wit or witbier.

Delicately scented, its low alcohol content makes it pleasantly thirst-quenching. It has an intense yellow color, the hops in boiling and fermentation give it a thin body but with character. Its little "demanding" nature means that, without exceeding, you can drink that extra drop.

With an unconventional style, this beer has a straw yellow color intensified by the red of the black cherries that stand out in both taste and aroma. The peanut butter and oats softly conclude the taste with a biscuit and creamy note.

The star anise with orange peels, cinnamon and the refinement with oak chips obtained from the barriques where the sherry was matured, give this beer olfactory notes and typically Christmas flavors on the palate.

A pale beer that is anything but simple, matured for 24 months in the cellars of Bellinzona where lactic bacteria contributed to its evolution and the creativity of the brewer completed the bouquet with the addition of white pepper at the end of fermentation.

Our first beer born from the cellars has a simple structure, slightly spicy and with a thin body, the wild yeasts and a long maturation in oak barriques have given it a fresh acetic note and a strong but delicate character.

From the wild yeasts that populate the cellars of Bellinzona, this surprising Bohemian Sour Lager takes shape, produced in steel vats, with a distinctly acetic character. The organoleptic structure is anything but schematic, giving unpredictable olfactory and gustatory cues.

Originally from Goslar, in Lower Saxony, Gose beers have the characteristic of being salty in addition to the acidity typical of this style. Our creation rested for two years in the cellars of Bellinzona in the company of strawberries to give you an experience that will probably not leave you indifferent.

Switzerland and Costa Rica, 9456 Km away and a single beer to unite these two countries, so different but so similar. Born from the mind of the brewer of "Officina della Birra" and that of the Costa Rican brewery "El Granero". Guava and lemongrass combined with hops from the new world make this beer extremely thirst-quenching and exotic, bringing back the desire for conviviality.

Elegant and mysterious but almost cheeky on the nose, it then proves surprising on the palate, definitely evoking chocolate in perfect harmony with its raspberry "filling".

After the beer with potatoes born from the collaboration between Dr. Brauwolf from Zurich with Dr. Gabs from Puidoux in 2019, ODB is also participating in a new project. Thus was born the “Polenta Graben” version produced with lemon balm and Farina Bóna from Ticino, hops from Zurich and Kveik yeast from the Canton of Vaud.

This collaboration with BFM combines local ingredients such as chestnut honey from Malcantone and corn Farina Bóna from Valle Onsernone with the production experience of our Jura friends and the result is a beer of great intensity and strong character.
